Lame de Boulanger (Baker's Blade)

A Baker's Blade, also known as a Lame de Boulanger, is used to make precise cuts in bread dough before baking. These incisions allow the dough to expand in a controlled way in the oven, preventing unwanted cracks and giving the loaf a uniform appearance. At the same time, the increased surface area enhances crust formation. The lame is extremely sharp, often slightly curved, and typically equipped with a handle to allow smooth, clean cuts. It is an essential tool for anyone who values not only the flavor but also the appearance of their homemade bread.

With the help of a CNC machine, this elegant and practical tool can easily be made by hand. I developed a two-part design that allows the narrow slot for the razor blade to be milled precisely. A decorative brass knurled screw completes the design—not only visually—but also enables a secure mechanism to retract the blade for safe storage.
